And, donut holes with blueberry catsup: Win! Moose will very likely return to America Eats, if only because poor Goose was out of town and so wasn't along for this initial visit. We'll keep the lobster roll and the donut holes in mind.<br /><br />It's interesting to think about what the term "historical" means at America Eats. Some comments on the restaurant seem disappointed that Andrés isn't more literal in his interpretations of the old recipes. People are bugged by the foams and the deconstructed soups. Well, hello, folks, it's José Andrés! What else would you expect? It's like the constitutional arguments between strict and loose constructionists, which seems appropriate in light of the restaurant's self-consciously nationalistic goals. We are glad Andrés is a loose constructionist. It's part of what we have always loved about his food -- the ingenuity and the sense of fun, of making something new out of whatever presents itself.<br /><br />Oh, and Hill Country: Definitely on the list. Had the lobster roll...the twist on that was, instead of mayo, they used celery foam. Never figured out how that was "historical" but it did taste good and was presumably lower in points. I count on Andres for interesting twists on desserts, so I'd want to see them before concluding that they weren't worth the bother. As it happened, the kitchen had just made some donut holes, so I had that, served with the blueberry catsup...and it was totally worth the points, at least the catsup was.
