Moose does that many before her (7-point) breakfast.

Dreadful sorry for the loss of your french fries, girlfriend. Because we love you and don't want you to suffer any deprivation as you weather the tyrannies of time, we pass along a deelish recipe for Butternut Squash Fries (1 point per serving!) that Moose picked up from her LAP a couple of weeks ago. I'm guessing they will go down fine with 12 ounces (5 points!) of some Rocky Mountain pale ale. Here is the recipe:

Butternut Squash Fries

3 spray(s) olive oil cooking spray

1 pound(s) butternut squash, peeled, seeded, long “neck” cut into sixteen 3/4-inch-thick sticks*

1 tsp table salt, or to taste

1/2 tsp chili powder, or to taste (optional)

Instructions

Preheat oven to 450ºF. Coat a baking sheet with cooking spray.

Arrange squash fries on prepared baking sheet and sprinkle with salt and chili powder; liberally coat with cooking spray.

Roast, turning once, until desired crispness, about 14 to 18 minutes. Yields 4 fries per serving.

Notes
*Start with a large squash. You will end up using about 1 lb of squash and have the “bulb” of the squash left over.

Any hard winter squash will work in this recipe.Roxie Smith Lindemannhttps://www.blogger.com/profile/06455529922082930949noreply@blogger.comtag:blogger.com,1999:blog-23938076.post-79059376587374961292011-04-03T17:10:06.909-04:002011-04-03T17:10:06.909-04:00What's that? (Will you have to change your name from Moose to Fawn or Slender Doe?)

I've gone from being able to eat or drink anything I want in my 20s and 30s to having to think about my choices. But, I didn't really *need* those french fries with my pitcher of beer, did I? In my later 30s I switched to ordering a salad with my pitcher of beer, but now I'm at the point of considering having to downsize from a pitcher to a pint.

And that's what's making the otherwise ageless, slim, and gorgeous Historiann feel old these days.Historiannhttp://historiann.comnoreply@blogger.comtag:blogger.com,1999:blog-23938076.post-36113810316888734122011-04-03T16:59:11.234-04:002011-04-03T16:59:11.234-04:00The typist, as promised, grins and says "than...The typist, as promised, grins and says "thank you" for the huzzahs, everybody. She may be a bit too apologetic, Historiann, but we are pretty sensitive around here to the problem of fat-shaming/hatred/negativity. Aside from Moose's own experience, there is also the education we've gotten on the issue from Shakesville, not to mention cultural studies of the body from feminism, queer studies, and disability studies. At some point, though, you wake up and say, "OK, sure, one can theoretically be healthy at any weight, but I don't feel healthy at this weight." Period.

Will look for that Wanda Sykes bit. We heart her. Yo...I think you're too apologetic here, Moose. You want to do the things you want to, and you came to the conclusion that you're not at the right fitness level to do those things. However you get there is up to you.

I admire your discipline!

I can't find it on YouTube, but there's a hilarious routine that Wanda Sykes does about fat/weight in the 40s and she jokes about her belly fat craving "breaaad and ALCOHOL." (Maybe you know it already?) I completely relate. . .Historiannhttp://historiann.comnoreply@blogger.comtag:blogger.com,1999:blog-23938076.post-1348679675997540272011-04-03T11:11:57.853-04:002011-04-03T11:11:57.853-04:00Great job!
